Ingredients:
- 300g cooled pumpkin purée
- 250ml sweetened condensed milk
- 1 egg
- 2 tsp vanilla paste
- 1 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1 tub of cream cheese frosting
- 1/4 cup Wildflower Oak Gin
- 2 cups icing sugar mixture
- Ground pecans
- Cinnamon sugar
Instructions:
- Preheat your oven to 180°C.
- In a blender, combine the pumpkin purée, sweetened condensed milk, egg, vanilla paste, cinnamon, ginger, salt, and nutmeg. Blend until well combined.
- Pour the pumpkin mixture into ready-made tart shells.
- Bake the tarts for 25 minutes.
- While the tarts are baking, make the Wildflower Oak Gin cream cheese frosting. In a bowl, mix together the cream cheese frosting, Wildflower Oak Gin, and icing sugar mixture until well combined. Transfer the frosting to a piping bag.
- To toast the ground pecans, heat a pan over medium heat and add the ground pecans. Toast for a few minutes, stirring frequently, until fragrant. Remove from the pan and sprinkle with cinnamon sugar.
- Once the tarts are cool, pipe the frosting onto the tarts and sprinkle with the toasted, cinnamon sugar-coated pecans.
