What could be better than vanilla cake, how about a Gin Vanilla Cake. Win the award for best desert at this year's Christmas party with this crowd pleaser.

Cake ingredients:
- 3 cups plain flour
- 2 tsp baking powder
- 1/4 tsp salt
- 220g unsalted butter (room temp)
- 1 & 3/4 cup white sugar
- 4 eggs
- 2 tsp vanilla paste
- 1/4 cup Wildflower Signature Gin
- 1/4 cup milk
- Juice of 1 lime
Glaze ingredients:
- 1 & 3/4 cup icing sugar mixture
- 4 Tbsp Wildflower Signature Gin
- 1 Tbsp lime juice
Icing ingredients:
- 2 & 1/2 cup icing sugar mixture
- 4 Tbsp Wildflower Signature Gin
- 2 tsp Vanilla paste
Method:
- Preheat oven 180 Degrees & grease/line spring-form cake pan
- whisk flour, baking powder and salt together.
- in a separate bowl: beat butter til creamy, add sugar & beat til fluffy/light
- add 1 egg at a time, vanilla paste, half of dry ingredients, milk, Wildflower Signature Gin, lime & then other half of dry ingredients
- pour into cake pan, bake for 30-40 minutes or til lightly golden (depending on your pan)
- while baking make gin glaze
- poke holes in cake and pour over glaze so it soaks in
- while cake is cooling make icing
- garnish with whatever you like, I'm using pomegranate, raspberries, cucumber curls and gold sprinkles to add a Christmas touch
