Wildflower Signature Gin Vanilla Cake

What could be better than vanilla cake, how about a Gin Vanilla Cake. Win the award for best desert at this year's Christmas party with this crowd pleaser.

Cake ingredients:
  • 3 cups plain flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 220g unsalted butter (room temp)
  • 1 & 3/4 cup white sugar
  • 4 eggs
  • 2 tsp vanilla paste
  • 1/4 cup Wildflower Signature Gin
  • 1/4 cup milk
  • Juice of 1 lime
Glaze ingredients:
  • 1 & 3/4 cup icing sugar mixture
  • 4 Tbsp Wildflower Signature Gin
  • 1 Tbsp lime juice
Icing ingredients:
  • 2 & 1/2 cup icing sugar mixture
  • 4 Tbsp Wildflower Signature Gin
  • 2 tsp Vanilla paste
Method:
  • Preheat oven 180 Degrees & grease/line spring-form cake pan
  • whisk flour, baking powder and salt together.
  • in a separate bowl: beat butter til creamy, add sugar & beat til fluffy/light
  • add 1 egg at a time, vanilla paste, half of dry ingredients, milk, Wildflower Signature Gin, lime & then other half of dry ingredients
  • pour into cake pan, bake for 30-40 minutes or til lightly golden (depending on your pan)
  • while baking make gin glaze
  • poke holes in cake and pour over glaze so it soaks in
  • while cake is cooling make icing
  • garnish with whatever you like, I'm using pomegranate, raspberries, cucumber curls and gold sprinkles to add a Christmas touch
